Lemon Cupcakes with Lavender & Geranium Icing

 

Ingredients

For the Sponge Mix…

6oz self-raising flour

6oz unsalted butter

6oz caster sugar

3 eggs, beaten

2 drops Lemon essential oil

For the buttercream icing…

6oz icing sugar

3oz butter

1-2 drops of essential oils - I used Lavender and Geranium essential oils, but you could use any essential oils (that can be taken internally!) to complement the buttercream.

Method

Cream the sugar and butter together until pale and fluffy.

Add 1 beaten egg at a time and mix together, then add the Lemon essential oil.

Slowly add in the flour and gently fold into the mix.

Spoon into cupcake cases and bake in oven for 12-15 minutes or until golden and risen. Allow to cool.

While the cupcakes are baking, mix the butter and icing sugar together until soft and spreadable.

Split in half.

Add 1 drop of Geranium essential oil and food colouring to one half and 1 drop of Lavender essential oil and food colouring to the other.

Spread or pipe onto the cupcakes and finish off with sprinkles or any other topping. Enjoy!
